Find this and many more recipes on the Giallozafferano App in English http://itunes.apple.com/app/giallozafferano-recipes/id384387249?mt=8 *** New York... what an amazing city, the Magnolia Bakery... and the Red Velvet cake, I really feel like making it! Obviously, not only did I eat the Red Velvet cake in New York, but I also bought myself a copy of the bakery's cookbook, so we'll be making together the original recipe, taken from the cookbook! Ingredients for three 9-inch round cake layers: Ingredients Red Velvet Cake For the 9-inch (24 cm) cake layers • 3 1/3 cups (440 g) of cake flour • 1 ½ sticks (170 g) of softened butter • 3 large eggs • 2 ¼ cups (450 g) of sugar • 6 tbsp of red food colouring • 3 tbsp (16 g) of unsweetened cocoa powder • 1 ½ tsp (6 g) of vanilla extract • 1 ½ tsp (9 g) of salt • 1 ½ cups (370 g) of buttermilk or whole milk yogurt • 1 ½ tsp (7,5 g) of cider vinegar • 1 ½ tsp (7 g) of baking soda For the vanilla frosting • 6 tbsp (50 g) of all-purpose flour • 2 cups (500 ml) of fresh whole milk • 2 cups (400 g) of sugar • 4 sticks (450 g) of softened butter • 2 tsp (9 g) of vanilla extract Now let's make together the red velvet cake layers, which of course are red in colour! So, place the room temperature butter in a mixing bowl and beat for at least 10 minutes with half of the sugar; now add the remaining sugar along with the eggs, one at a time. Once blended, add the vanilla... I am using vanilla extract, but you can use the seeds of a vanilla pod or vanilla powder... the red food colouring... and, once incorporated, the sifted unsweetened cocoa powder. The dough is ready, now remove the bowl from the mixer and add the buttermilk, in which the salt has been dissolved, alternating with the sifted flour. Mix in the baking soda, which has been dissolved in cider vinegar. All that's left is to divide the dough into three 9-inch (24 cm) round cake pans and bake in static oven at 350°F (180°C) for 25 to 30 minutes, testing for doneness with a toothpick. The cakes are cooked to perfection, so leave them to cool and move on to the frosting: pour the cold milk into a saucepan, whisk in the flour... and stir until dissolved, with no lumps. After that, place over low heat to thicken. This reminds me of when I was looking for the Magnolia bakery in New York, and when I found it, there was a lady making this famous cake right behind the shop window, so I couldn't resist entering and tasting it... I must say it was really really good! Here we are, the mixture has thickened, so transfer to a container... cover with cling film, placing it directly on the surface to prevent a skin from forming, and let it cool to room temperature. While the frosting and the cakes are cooling, let's go on with the rest of the frosting recipe, that is, place the softened butter in a mixing bowl and beat with the vanilla extract and the sugar... until you have a pale, fluffy mixture. As you can see the mixture is bright white and fluffy, so beat in the previous one, that has come to room temperature. And now, let's assemble the red velvet cake, starting with the first layer; if the cakes come out of the oven slightly dome-shaped, just level them off with a knife, as I did. Then spread the first layer with the resulting frosting, using a spatula... and repeat stacking the three cakes on top of each other. The red velvet cake is completely iced in white frosting, so if you happen to have a rotating cake stand like this, which by the way I saw in New York, hold the spatula straight as you rotate the plate... do the same on top... to make it smooth. Crumble the cake scraps and use the crumbles to garnish as desired. Now the red velvet cake is ready to be eaten... I can't wait! See you next video recipe!

Reserve the One Top: http://bit.ly/2v0iast Get the recipe: THE ULTIMATE CHOCOLATE CAKE Servings: 12 INGREDIENTS CAKE 1½ cups flour 1 cup Dutch processed cocoa powder 1 teaspoon salt 1½ teaspoons baking soda ½ teaspoon baking powder 1½ cups stout 1 tablespoon vanilla extract 1 tablespoon espresso powder 1 cup butter, softened 1½ cups sugar 3 eggs ½ cup mayonnaise 4 ounces dark chocolate, chopped BUTTERCREAM 1½ cups butter, softened 1 tablespoon vanilla extract ½ cup Dutch processed cocoa powder 5 cups powdered sugar Fresh fruit, to decorate PREPARATION 1. Preheat oven to 325˚F (160˚C). 2. Grease and line three 8-inch cake tins with parchment paper. 3. In a large bowl, sift together the flour, cocoa powder, salt, baking soda, and baking powder. Set aside. 4. In a large glass measuring cup, combine the stout, vanilla, and espresso powder. Set aside. 5. In a large mixing bowl, cream together the butter and sugar until it is light and fluffy, about 5 minutes, scraping down the sides occasionally to ensure all the ingredients are being evenly creamed together. 6. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. 7. Add the mayonnaise and beat until the mixture is smooth and creamy. 8. Alternate adding the prepared dry and wet ingredients to the batter. Starting with about ⅓ of the dry ingredients, beat until incorporated. Then add ⅓ of the liquid ingredients, mixing until the batter comes together. Continue until all the wet and dry ingredients have been incorporated. 9. Using a rubber scraper, fold the dark chocolate chunks into the batter. 10. Distribute the batter evenly between the 3 prepared cake tins. 11. Bake for about 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. 12. Place the cakes on a cooling rack and leave to cool for about 10-15 minutes, until the outside of the pan is cool enough to touch. 13. Once the cakes have cooled, loosen the edges using a butter knife. Then place a large plate over the tin and invert to release the cake from the pan. Remove the parchment paper from the bottom of the cake and slide the cake back onto the cooling rack to cool completely. Repeat for the remaining two layers. 14. While your cakes are cooling, prepare the buttercream. 15. In a large bowl, beat together the butter and vanilla. 16. Gradually add in the cocoa powder, powdered sugar, and milk, continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy. 17. To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/red-velvet-cake Ingredients Makes about 10-12 servings Cake Batter 2 2/3 cups (310g) cake flour 2 tbsp (16g) unsweetened cocoa powder 1 tsp (5g) baking soda 1 tsp (5g) salt 1/2 cup (113g) unsalted butter, room temperature 1 1/2 cup (300g) sugar 2 eggs 1 cup (220g) vegetable oil 1 tsp (5ml) white vinegar 2 tsp (10g) vanilla extract 1 cup (240g) buttermilk, room temperature 1- 2 oz (30g) red food coloring gel Cream Cheese Frosting 17 oz (500g) cream cheese, room temperature 1 1/3 cup (300g) heavy whipping cream, chilled 1 tsp (5g) vanilla extract 1 1/4 cup (156g) powdered sugar 1. Preheat oven to 350F (180C). Grease with butter and dust with flour two 9 inch (23 cm) round cake pans. 2. In a large bowl sift together the flour, cocoa powder, baking soda and salt and whisk to combine. 3. In another bowl mix butter with sugar until combined. Incorporate eggs one at a time. Mix in oil, vinegar,vanilla extract and buttermilk. Incorporate flour mixture until well combined. 4. Gradually add red food coloring until the desired color is reached. 5. Pour the batter evenly into the prepared pans. 6. Bake for about 30 minutes until a toothpick inserted into the center comes out clean. 7. Let pans cool on a cooling rack for 10 minutes. 8. Remove the cakes from the pan and let them cool completely. 9. Prepare the frosting. In a bowl sift the powdered sugar. Beat the cream cheese with powdered sugar and vanilla extract until smooth. 10. In another bowl whip the cream until stiff peaks form. Gradually fold into the cream cheese mixture until well combined. 11. Assemble the cake. Cut the tops of the cakes to create flat surfaces. Make crumbs out of the left pieces of cake and set aside. 12. Place 1 cake layer on your serving plate. Spread evenly with a bit less than half of frosting. Add the second layer of cake. Gradually spread the remaining frosting on top and sides of the cake. 13. Decorate the cake with remained cake crumbs if desired. The cake is ready to serve. 14. The leftover frosted cake can be covered and refrigerated for up to a week. Serve at room temperature. I used olive oil in the video but for best results go for coconut oil 1 1/3 cup coconut sugar 1 cup vegan milk chocolate chips flax eggs: 3 tbsp flax flour plus 1 cup hot water 2 tsp baking soda 3 tsp baking powder 1/2 cup agave nectar Frosting: You might want to make a double recipe as this will only give you a thin layer of frosting! You will need: 4 tbsp coconut oil 4 tbsp raw cacao powder 3-4 tbsp agave nectar 1 tsp vanilla bean powder For the cake: Before mixing all the ingredients for the cake you need to prepare two things! The flax eggs and the coffee mixture. So for the flax eggs combine the water and the flax flour. We're using flax flour here not flax meal. So mix that up for a few seconds. Set that aside. Now its time to make the coffee mixture. combine the water and coffee and stir. Set aside. Ok everyone lets make this delicious vegan gluten free chocolate cake!!!! put all the dry ingredients in a bowl – that is the oat flour, rice flour, buckwheat flour, , cacao powder, baking soda, and baking powder, vanilla bean powder., xantham gum And mix! In another bowl place all the wet ingredients that is- the olive oil, flax eggs, coffee, apple cider vinegar, sugar,agave nectar, milk, and whisk until all ingredients are combined. Notes: for the coffee just take 2 tbsp coffee and ½ cup hot water and mix. For the flax eggs take 3 tbsp flax flour not “meal” plus 1 cup hot water and mix. The cinnamon and cardamom spices are optional! If you want to keep it as a simple chocolate cake then you don't have to put those extra spices in! Also the buckwheat flour in this recipe is really strong and adds a very unique flavor to this cake. If you dont like the taste of buckwheat than you can most likely substitute the 1/2 cup buckwheat flour we are using here for 1/2 cup of rice flour. I haven't tried it but it will most likely work! Place in a baking tray of your choice and bake at 170 degrees Celsius for 1 hour. After 40 minutes remove from the oven and place some foil on the top. For the quick gananche combine 4 tbsp cacao powder, 4 tbsp coconut oil and 3-4 tbsp agave nectar in a bowl and mix until creamy, you can also add in some vanilla to that. Allow me to explain. I first tried this recipe way back when we were enjoying our very first summer at the cottage. Our friends M & G (their identities, like this recipe, are TOP SECRET!) came up for the weekend with this WHISKY CAKE already made. After dinner, while we sipped coffee and watched the sun set, we had the cake for dessert. I enjoyed three (if anyone asks, two) pieces of this heavenly treat and instantly knew I wanted to know its secrets. This cake has a crazy-soft, incredibly moist crumb, and the whisky adds a fragrance and flavouring that is beyond fabulous. I fell head over heels for this dessert that evening, but my guest was tight-lipped on the details. I made a personal vow to get the recipe and sure enough, some gentle coaxing did the trick. My only tweak has been to make it exclusively with Irish whisky - spelled WHISKEY on the Emerald Isle - as I believe the spirit to have quite an exceptional taste. Instagram: https://www.instagram.com/yumsecret/ INGREDIENTS For pastry layers: 2 eggs, room temperature 2/3 cup (150 ml) water, cold ½ tablespoon distilled white vinegar 21 tablespoons (300 g) unsalted butter, cold 5 cups (600 g) all-purpose flour Pinch of salt For filling: 2 cups (500 g) milk 4 egg yolks 2 cups (170 g) powdered sugar 1 teaspoon vanilla extract 1 tablespoon corn starch 2 cups (350 g) whipping cream PREPARATION 1. To Make the Pastry Dough. Mix cold water and vinegar in a cup. 2. In a separate cup whisk together eggs. Combine mixtures of two cups and stir to combine. Add the salt. 3. Blend cold butter cubes with flour. 4. Add egg mixture and mix until well combined. Divide the dough into 12 equal pieces. Wrap each ball in a plastic wrap and refrigerate for 30-60 minutes. 5. Preheat the oven to 400°F (200°C). 6. Roll each dough ball into 8-inch circle on slightly floured surface. Transfer it onto a baking sheet and pierce it with a fork everywhere. Bake each layer for 10-12 minutes, or until golden brown. 7. To Make the Filling. Bring the milk to a boil. 8. Mix the egg yolks, corn starch and vanilla extract together. 9. Tamper the egg yolk mixture by slowly pouring the hot milk in, all the while mixing. 10. Pour the mixture back into the pot and bring it to boil, continuously (!!) stirring and keeping the bottom of the pot from scorching. Once boiling, cook until thick. Remove from heat and cool. 11. Add powdered sugar and stir to for a smooth cream. Cool. 12. Whip the whipped cream and add to the custard. Mix together. 13. To assemble the cake. Place one layer of the cooked dough in the bottom of an 8-inch springform pan and cover evenly with a layer of cooled custard filling. Continue to build up the cake in this way, layering the custard on top of the pastry, finishing with the 12th pastry layer. Take some crumbled scraps into the palm of your hand and press them against the sides of the cake, all around. Sprinkle the rest of the cake crumbs on top of the cake. The cake scraps are not only for decoration, but also to keep a skin from forming on the custard. 14. Keep the cake at room temperature for 12 hours+12 hours in the fridge; or in the fridge for at least 48 hours before continuing. Enjoy!

Pancakes are one of the best breakfast of all times. McDonald's have pancakes included in their breakfast menu as well and the best part is eggless. I know most people make it with eggs but eggless doesn't make it less tasty or airy or soft. This recipe has a secret ingredient which will make your pancakes super duper soft. That ingredient is cornflour. Cornflour .. How .. You must be wondering.. I bet you have encountered at least a dozen of cake recipes which call for cake flour. Well, Cake flour is a low protein flour so its very easy to convert all purpose flour to cake flour you just have to mix some cornflour to it. The ratio has to be for every 1 cup of all purpose flour put 1 Tsp cornflour. Cornflour makes the texture of hot cakes very tender and it softens the crumbs. Lets check the ingredient list : - All purpose flour (1/2 Cup) - Powdered Sugar (1/3 Cup) - Baking powder (1/2 Tsp) - Baking soda (1/4 Tsp) - A pinch of salt - Sift it - Cornflour (1 Tsp) - Mix the dry ingredients - Oil ( 2 Tbsp) - Water (1/3 Cup + 1 Tbsp) - Vanilla extract (1/4 Tsp) - Vinegar (1 Tsp) ( you can substitute vinegar with lemon juice (1/2 Tbsp)) - Use cut & fold method to mix - Heat a griddle or pan - On low heat - Put some oil & rub it with tissue paper ( If do not rub then the texture of the hot cakes does not become smooth so do not skip ) - Pour 1/4 cup batter - When tiny bubbles appear flip - After you flip, you will see how significantly the pancake rises - Carefully remove it from heat after its done - This recipe makes 5 medium pancakes - Put some butter - Pour some maple syrup / pancake syrup or honey - Enjoy this easy eggless pancakes as breakfast. Yield: 879 g/31 oz/1# 15 oz Egg white, Fresh 191 g/7 oz Sugar, granulated 232 g/8.2 oz. Butter, unsweetened 448 g/1# Vanilla Extract 28.35/ 1 oz. Modification: For Chocolate: add 34 g/1.19 oz of dark chocolate to 100 g/3.52 oz butter cream Directions: • Setup mixer and whip attachment and sanitize mixer with lemon juice or make sure it very clean. • Take egg whites and sugar, combine and heat to 115 F or till sugar is dissolved, place bowl onto mixer and whip until meringue is at firm peak. • Once meringue is cooled and at 3x the volume, add fat in slowly portion-by-portion until blended. • Once smooth, use as needed or flavor as desired. ***Chef tip: I prefer to store it 12- 24 hours before using to allow buttercream to settle. INGREDIENTS Flourless Chocolate Cake Batter 120 g dark chocolate 60-70%, finely chopped 85 g unsalted butter, softened 110 g sugar 1 teaspoon cocoa powder 2 large egg yolks, at room temperature 1 egg, at room temperature 6 large egg whites, at room temperature Lemon Cream 110 g sugar zest of 1,5 lemons, removed with a zester and finely chopped 2 large eggs freshly squeezed lemon juice (from 2 lemons) 150 g unsalted butter, cut into cubes Chocolate Mousse 240 g heavy cream 2 small eggs, at room temperature 4 small egg yolks, at room temperature 225 g dark chocolate 60-70%, coarsely chopped 70 g sugar 15 g water Chocolate Mirror Glaze Recipe here https://www.youtube.com/watch?v=hZVtFdlh3BA PREPARATION 1. Preheat the oven to 350°F/180°С. Line the baking sheets with parchment paper. 2. Melt the chocolate over simmering water or in a microwave oven and allow it to cool to 114°F/40°С. 3. In a mixer, beat the butter, 30 g of the sugar, and the cocoa powder together until the mixture is creamy. Add the yolks and beat until well blended. Add the egg and then the melted chocolate, beating only until the mixture is smooth, satiny, and blended. Set the bowl aside for the moment. 4. In a clean, dry bowl whip the egg whites until they form soft peaks. Gradually add the remaining sugar and beat until the peaks are firm and shiny. The batter is now complete and must be used immediately. 5. To make disks, pencil the outline of four 8-inch circles on each piece of parchment; turn the sheets of paper over. Spoon the batter into the pastry bag and pipe it at the center of each circle. You can also pour the batter directly into 20 cm baking form without a bottom, as I did. 6. Bake disks for 25 to 30 minutes. Cool to room temperature. Carefully remove the parchment. 7. Make the lemon cream. Place the sugar and lemon zest in a medium bowl and rub their together between your fingers until the sugar is moist, grainy, and very aromatic. 8. In a saucepan, place the sugar and lemon zest, eggs and lemon juice. Cook, stirring with the whisk, until the cream thickens and reaches 180°F/80°С. It could take as long as 10 minutes. 9. The lemon cream to pass in the mixer bowl and cool to 140°F/60°С, about 10 minutes. 10. Working with the mixer on high speed, beat the cream while adding the pieces of butter. When all the butter has been incorporated, continue beating the cream for another 3 to 4 minutes - extra insurance for a light and smooth lemon cream. 11. Place a piece of parchment paper on a cardboard cake round and center a 20cm tart ring on the cardboard. Spoon in the lemon cream. Freeze until firm, about an hour or two. 12. Make the chocolate mousse. Beat the cream until it holds medium-firm peaks, then cover and chill it until needed. 13. Place the eggs and yolks in the bowl of a mixer fitted with the whisk attachment and beat at the lowest speed for a few seconds, just to break up the eggs; set them aside while you prepare the chocolate and sugar syrup. 14. Melt the chocolate in a microwave or in a bowl over a pan of simmering water. Remove the chocolate from the heat and cool to 114°F/45°С. 15. While the chocolate is melting and cooling, place the sugar and water in a small heavy-bottomed saucepan. Bring the mixture to a boil, stirring occasionally. Boil the syrup over high heat without stirring it until it reaches 250°F/120°С, about 8 to 10 minutes, then immediately remove it from the heat. 16. With the mixer on the lowest speed, beat the eggs for a few seconds, then very slowly add the syrup in a thin, steady stream. Increase the mixer speed to high and beat the eggs for about 5 minutes, or until they are pale and more than double their original volume. If the mixture is still warm, reduce the speed to medium and continue to beat until the eggs are at room temperature. 17. Using a large spatula, fold about one quarter of the whipped cream into the chocolate. Fold in the rest of the cream and then, very delicately, fold in the whipped egg mixture. 18. Refrigerate the cake for about 1 hour to set the mousse. 19. You can decorate a cake as desired. Cinnamon oil 2-3 drops Chocolate chips 4 oz. Total yield: 6# 4 oz. Method: • Make sure to measure all your ingredients and gather all equipment before starting • Place tabletop mixer with paddle attachment on work area, then place the impastata cheese into mixer bowl, mix the cheese on 1st speed to combine and smooth • Add granulated sugar next, allow to mix in completely and dissolve, the texture will now change to a smoother consistency • Next is the vanilla, cinnamon oil, and chocolate chips (optional: if you don't want to mix in the chocolate chips, you can use to sprinkle at the end, but we always have chips in our Cannoli’s) • Once all ingredients are added mix only until incorporated, place in pastry bag and into the refrigerator until ready to pipe and serve.
