Chocolate Magic Cake | Delish
So light it might just float off your plate. DIRECTIONS 1. Preheat the oven to 325 degrees F. 2. Grease a 8"x8" baking dish with butter or cooking spray. 3. In a medium bowl bowl, whisk together the flour and cocoa powder. Set aside. 4. In a separate bowl, whip the egg whites with vinegar until stiff peaks form. Set aside. 5. In a third bowl, beat the egg yolks and sugar until pale yellow in color (it will still be grainy). Beat in the melted butter, espresso powder and vanilla extract until evenly incorporated. Mix the flour mixture into the batter until evenly incorporated. Add the milk and beat low speed. Gradually and gently fold in the egg whites. Pour the batter into the prepared pan and bake for 50-60 minutes or until the cake is slightly jiggly. 6. Cool completely. Dust with powdered sugar and garnish with fresh berries. INGREDIENTS 1/2 c. unsalted butter, melted and cooled slightly 2 1/2 c. Cheekyricho Chocolate Magic Custard Cake. We love chocolate, cake and chocolate custard. This cake has got the lot. Its relatively simple with a few steps involved but makes a delicious 3 separate layered cake in the one dish. You eat it chilled with fresh fruit, icecream, cream or just on its own with coffee. We made it for a recent afternoon tea and it was devoured first. We do hope you give it a try. You can substitute Instant coffee for espresso if you wish. One of our subscribers has kindly offered the advice to use only one teaspoon of coffee powder to achieve the correct flavour. Preheat the oven to 160C (320F). 2. Line the cake pan with parchment paper. 3. Melt the butter in a microwave at 600W for 30 seconds. 4. Warm the milk (not hot). 5. Separate the eggs. 6. Place the egg yolks in a bowl. Add half of the sugar (30g) and water, then beat them with an electric mixer until white like mayonnaise. 7. Add butter little by little and mix well. 8. Sift in flour and cocoa powder, add salt, and mix well. 9. Add milk 1/2 at a time, then add vanilla extract and mix well. 10. In a different bowl, whip egg whites and the rest of the granulated sugar (30g) with an electric mixer until firm peaks form. 11. Mix 9 and 10 together for 10 times with a whisk. DO NOT OVER-MIX. Pour the batter into the pan and even out the surface. 12. Bake at 160C (320F) for about 45~50 minutes. 13. Leave to cool completely, then cool in the fridge for 2 hours. Here's the recipe: 4 eggs, separated, at room temperature 1 Tbsp water ½ cup + 2 Tablespoons (5.3 oz, 150 g) sugar 1 stick (125 g) butter, melted ¾ cup (4 oz, 115 g) flour 2 cups (500 ml) milk, lukewarm 2 tsp vanilla extract Instructions Mix egg whites until stiff. In another bowl, beat the egg yolks with the sugar, water and vanilla until light. Add melted butter and continue beating for another minute. Then add the flour and mix it in. Add the milk (it has to be lukewarm, otherwise the butter will harden) and beat until well incorporated. Gently fold in beaten egg whites using a spatula. Pour batter into a greased 8 inch x 8 inch (20 x 20 cm) baking dish (do not use spring form because batter is too liquid and the pan could leak) and bake in preheated 325 F oven for about 60 minutes or until the top is golden. Cool in the pan for at least 3 hours. Serve sprinkled with powdered sugar. Place the egg yolks in a bowl. Add warm water and sugar (leave out 1 tbsp. for egg whites), then beat them with an electric mixer until white like mayonnaise. 7. Add the melted butter little by little and mix well. 8. Sift in flour, add salt, and mix well. 9. Add milk 1/2 at a time, then add vanilla extract and mix well. 10. In a different bowl, lightly whip the egg whites. Then add 1 tbsp. of sugar and beat with an electric mixer until firm peaks form. 11. Mix 9 and 10 together for 4~5 times with a whisk. It's called magic because with just one cake batter you get 3 layers with different textures. We'll make a vanilla cake, but you can flavour it in many different ways... let's get to work! Ingredients for an 8-inch square baking pan Magic cake for 8-inch (20 cm) square baking pan • 1 cup (115 g) of cake flour • 4 medium eggs, room temperature • 1 tbsp of ice cold water • ¾ cup (150 g) of white sugar • ½ cup (125 g) of cooled, melted butter + as needed, for brushing the pan • 1 tbsp of vanilla extract • 2 cups (500 ml) of warm fresh whole milk • 1 tsp of lemon juice (or white wine vinegar) • 1 pinch of salt For sprinkling • powdered sugar, to taste Start the recipe by melting the butter, making sure it doesn't brown, then let it cool to room temperature. Then take the eggs, at room temperature too, and separate the yolks from the egg whites. Now combine the egg yolks and the sugar in a stand mixer, fitted with the whisk attachment; beat until the mixture is pale and frothy, then beat in a tablespoon of cold water, the vanilla extract -- you can use vanilla powder or the seeds of a vanilla pod, in this case let them steep in the melted butter -- then add a pinch of salt and finally the butter, which should be cooled by now. The mixture is well blended, now add the flour, that has been previously sifted; if you want to make a cocoa cake, reduce the amount of flour to ½ cup (65 g) and add just over ½ cup (50 g) of unsweetened cocoa powder. Now turn on the mixer and beat in the milk. Of course, you can do all these steps by hand. Beat for a minute to blend the ingredients, then we're ready. And here's our mixture, as you can see it's thin and without lumps; if your mixture is a bit lumpy, strain through a fine strainer using the back of a spoon to remove any lumps. Now take the egg whites, at room temperature, place in a bowl -- I'm using a stand mixer with the whisk attachment, but you can use an electric beater -- and beat the egg whites, until they turn white, then add a teaspoon of lemon juice or white wine vinegar, to stabilize the foam. Beat until stiff but not dry peaks form, which means that the egg whites should be stiff but still creamy. Here we are, now fold the egg whites into the previous mixture... then carefully blend them together, using a spatula or, even better, a whisk. When the 2 mixtures are fully incorporated, we're ready to fill the pan. That's it, now pour the batter into a baking pan, which has to be eight by eight inches, and quite deep. Brush it with butter and line with parchment paper, then fill with the batter, that is pretty thin, and bake the magic cake in a preheated static oven at 300°F (150°C) for about 80 minutes, until golden brown on top. After that, remove the cake from the oven, let it cool completely to room temperature, then cover the baking pan with cling film and place in the fridge to set for a couple of hours. I suggest that because this will make it easier to cut. As you can see, our magic cake is ready. Now you can notice the 3 different textures: the bottom layer is thick and deep-yellow, the middle layer is creamy, whereas the top layer is spongy like sponge cake. You can sprinkle the top with powdered sugar to taste -- if you used cocoa, sprinkle with unsweetened cocoa powder, of course... then place on a cutting board or a flat plate, without raised edges, and cut into squares. You can wet a long, sharp knife with cold water to keep it from sticking to the cake, otherwise use a fishing line, stretched between your hands. Add the powdered sugar, whipping cream, condensed milk, grated coconut, eggs and stir until combined. Prepare the the 8 inch (20 cm) round cake pan: grease with butter, line with baking paper and pour the batter into cake pan. Bake in water bath at 338 F (170 C) for 1 hour and 20 minutes, covering the pan with an alluminium foil to prevent to burn the cake’s surface. Let it cool down completely and extract from the pan. Dark Chocolate frosting directions: Chop the chocolate into small pieces. Put the whipping cream in a saucepan at medium heat until it becomes to boil then turn the heat off; put the chocolate pieces into the saucepan and wait for a minute. After that, start mixing chocolate with whipping cream until it becomes a plain dark cream. Final frosting: Pour the chocolate frosting on the cake and with a spatula smooth the surface. Keep it in the fridge.

Inspired By: Byron Talbott’s Chocolate Ball: https://www.youtube.com/watch?v=UOjY61tlh98 Byron Talbott’s Facebook Page: https://www.facebook.com/byron.talbott/ Magic Chocolate Ball Servings: 2 INGREDIENTS 8 ounces milk chocolate, chopped or in chips 2 brownies, prepared as desired Assorted berries, to serve Ice cream, to serve 8 ounces dark chocolate 70% cacao higher, chopped 1 cup heavy cream PREPARATION 1. Melt the milk chocolate in a microwave in 20-second intervals, stirring in between each until smooth. 2. Open a 6-inch fillable ornament, then pour the chocolate into one of the halves. 3. Close the ornament, rotating the ball so that the chocolate evenly coats the entire surface. You may have to shake a bit to eventually get the chocolate to fill in any holes. 4. Place the ball the freezer, then flip it after two minutes. Repeat this 2-3 times. The chocolate should be set by then. Freeze for at least 30 minutes. 5. Remove the ball from the freezer. Making sure to be extremely careful, open the ornament. Making sure you work quickly and that you don’t touch the ball for too long with your warm hands, remove the ball from the other half. If you want to be extra safe, place the ball back into the freezer in a bowl until it’s ready for the next step. 6. Dip or run a flat-bottomed bowl in boiling water, then dry the entire bowl. Invert the bowl onto a flat surface, then place one side of the frozen chocolate ball on the hot bowl. 7. Twist back and forth with a gentle motion, making sure that you’re not applying too much pressure to the ball, as it is very fragile. Use a paper towel to help insulate the ball from your warm fingers. You may have to reheat and wipe off the bowl a few times as it will cool down a bit. Place the ball back in the freezer. 8. On a large plate, stack the brownies on top of each other, then surround them with berries. Place a scoop of ice cream on top of the brownies, then slowly place the chocolate ball on top. 9. To cover up any holes or imperfections along the seam where the ball touches the plate, surround the base of the ball with more berries. 10. Microwave the dark chocolate with the heavy cream in 20-second intervals until smooth and glossy. 11. Pour the chocolate sauce over the ball in a circular motion. 12. Enjoy!
